To get top quality cocoa masses, we follow a painstaking production process.
The cocoa beans, previously selected in their countries of origin, are roasted, cooled, grounded and then sifted using standard sieve sizes to remove shells and impurities.
During the whole production process, continuous aspiration completely removes the shells. The “nibs” obtained are sent to refiners to produce pure cocoa masses. We produce both “African Blend” cocoa masses and “single origin” ones which emphasize the flavour of the various areas of origin.
